Sugar Cookies

Today a couple of my very favorite neighbor kids were over and we made cookies.

I’m blogging the recipe primarily so I’ll quit losing it. My mom got it from a college roommate of hers, I think. If you like sugar cookies that just taste like sugar cookies (no almond, lemon, etc.), then this is the recipe for you.

1 lb margarine (seriously DO NOT use butter)
3 eggs
2 c sugar
3 t vanilla
6 c flour
1 t baking soda
1/2 t salt

Mix, roll, cut, and bake at 400 degrees for 5 to 7 minutes.

Use as little extra flour to roll and cut them as possible and don’t roll the dought out more times than necessary.

And speaking of recipes….last time I was at my mom’s, we made some salsa that she found by clicking over to one of you readers’ blogs. It was called Finch Family Salsa and it was delicious, but she can’t remember where she copied it from. If it was you, THANKS!

    You know, I remember my mom having a cookie press, but I don't know if this is the recipe she used in it or not. I'll find out and report back.

    you must be quite a bit ahead of me in the game if you have time to host other peoples children for cookie decorating. i am still hoping there is enough time left to do all the VITAL stuff…like wrapping, shopping, shipping, etc.

  4. That's so fun! I'm experiencing some MAJOR Mom Guilt in that I'm not likely to get to the cookie decorating w/my kids this year. Why must I feel the guilt?

    I don't actually know how many it makes! Oops! It does make a pretty big batch and I've thought about halving it many times, but then I get hung up on the odd number of eggs and decide to just eat more cookies.

    I've been searching for the perfect sugar cookie recipe for YEARS!! I had a sugar cookie that neighbors made for us when I was about 9 years old and I've never had a homemade sugar cookie as good as that one…..I still dream about it.     I find that if you don't want to add more flour when rolling cookies or pie crust, rolling things out between two layers of waxed paper really works!! I learned this in Home Ec back in the '50's and I've used it ever since.
