Bread. Not Wonder Bread…..this bread.
I made some Thursday and it turned out OK — delicious, but ugly. (SO many directions for jokes on that one, but I’ll leave it alone. It’s Sunday.)
I made some again today and it looks better.
See that wonky party on top? Totally stuck to my towel. And see how it’s kind of flat? I think I need a smaller, rounder pot. Mine’s like 9 quarts and oval-y. Bread flour worked better than regular flour. See? Obsessed.





















How does it taste? It looks delish. Could you send a slice my way with lots of butter?

Char, did I give you the peasant bread recipe that I love? It is soooo easy but tasty and pretty. Remind me and I will pass it along.
Char, glad to see it turned out for you! I too have had some trouble with it sticking to the towel. I haven’t seemed to find the exact right amount of flour – either way too much or not enough. I made a triple batch a couple days ago, though, and only had two tea towels. So for the third loaf, I let it rise on a hunk of parchment. It stuck a little to the parchment, so rather than flip it, I just carefully set it, parchment and all, into the dutch oven. Turned out great and slipped right off the paper once it was cooked, but I missed the nobbly rustic finish on top that you get when you flip it and some of it sticks a bit.
You really ought to try adding a bit of whole grain flour into it. Not too much – max 1/3 of the total flour – but it adds a huge flavor punch. My fave is rye + semolina.

I make bread twice a week and have been looking for nearly two years for a Scali bread recipe. Turns out it is a recipe that Italian familes pass down but do not share. Anyone please share….
