Cashew Cookies


So, in addition to our sewing group, my awesome neighborhood also has a cooking group. The theme this month? COOKIES! This recipe is a family secret and I might get disowned for sharing it, but it’s a chance I’m taking. Plus, that would mean my mom would actually have to comment on my blog. Ha! These suckers are delicious. My mom used to make my grandpa a batch every year for his birthday. One year, when she lived in Florida, I made them for him instead. He took the container from me and went straight in the other room to hide them so he wouldn’t have to share. THAT is how good they are….kind of like a carmel cashew shake in cookie form.

Cashew Cookies

1/2 c butter
1 c brown sugar
1 egg
1/3 c sour cream
2 c flour
1/4 t salt
3/4 t baking powder
3/4 t baking soda
1 t vanilla
1 3/4 c salted cashews

Cream butter and sugar. Add egg and sour cream. Add dry ingredients. Add vanilla and cashews. Bake at 350 degrees for 12 minutes.

Frosting

1/2 c butter
3 T cream
1/4 t vanilla
2 c powdered sugar

Brown butter. Add rest.

    Yup. These were the hit of the party! Alan devoured it. Loved it. Though he doesn't like cashews or really sweet stuff. He LOVED these! BEST COOKIE EVER…and YOU know I love cookies!

    2 thinkgs……1: These look and sounds FANTASTIC, I am making them TODAY! and 2: When you say like a carmel cashew shake, do you mean like the one at Nielson's Frozen Custard or just like a regular old carmel cashew shake??? Cause the one at Nielson's is TOO DIE for, so if the cookie is anything like it, i'm in BIG trouble!!

  7. Browning butter = You melt it in a sauce pan or frying pan or whatever. The temperature needs to be just hot enough that it bubbles. Once it's melted, you let it keep bubbling 'til it turns brown. As soon as it's brown, you take it off the heat immediately. It'll get REALLY foamy.

    There's also a moment when you're making the frosting that you think you might have just ruined the whole thing. Push through that moment, and you'll be good.

    Random ? Have you tried Browned butter on popcorn. It is WAY better than just melting the butter, which makes my popcorn soggy. By the way, I check your blog all the time. You are so creative.

    We had a lady in the ward that made these WONDERFUL pistachio cookies! She would NEVER EVER share the recipe, not with anyone! WE felt pleased when we got a plate, but one day she moved and now we never get them.
    Now I just feel like maybe she could have shared it. It would have been way nice so everytime anyone brought them or shared them we would have remembered her.

  19. i made these cookies tonight and they are one of the best cookies I have ever had. YUM! the brown butter makes all the difference in the world.
